Cranberry Sauce

I hope you enjoy the holiday with loved ones, be it friends, family or both.

I am so thankful this year. This is my first Thanksgiving as a mommy. I have been able to stay home with my baby and enjoy his first year of life. I have wonderful health, a family who loves me and great friends! I serve a God who is big enough to supply my all needs. My husband has a job and will continue to have one into the new year. We have been together for 12 amazing years.

We will be going to our friend's house for the day. There will be 4 families there, who live out of state from "family". It's so nice to have people to love you, regardless of blood relation.

One of the dishes I am making to take, is fresh cranberry sauce.
I was never a fan of the stuff out of the can. It never tasted right & I wasn't sure what to do with it. A few years back, I found a recipe and love it! It's always a hit & I was asked specifically for it this year.

So, I thought I would share it with you. I don't want to keep it to myself.

1 pound of fresh cranberries
1 orange, juiced & zested
1/2 tsp ground ginger
1/4 cup sugar

Wash berries & remove any stems and mushy berries.

Place berries in pan with approx 2 inches of water.
Boil for 10 minutes ~ berries will POP as they boil.
Reduce heat & simmer for 5 minutes
add orange juice & 1 teaspoon of zest ~ mix
add sugar & ginger ~ mix

Pour into Bowl (not white plastic, it WILL stain! Learn from my mistakes! haha)
Refrigerate for a couple hours, overnight is best.
